Iceland Lean Beef Steak Mince
In the case of beef, this is usually associated with the cut, i.e. chuck and round cuts are typically “lean.” In contrast, extra lean mince goes one step further and contains no more than 10 percent fat per 100 grammes of meat. Extra lean mince can contain as much as 95 percent lean meat in some cases (so 5 per cent fat).
In order to achieve extremely lean beef (a 90/10 blend), you can use eye of round, sirloin tip, or bottom round (be sure to remove any exterior fat before cooking). Not every cut of beef is created equal; in fact, combinations of different cuts frequently yield the finest results in terms of flavour.
