A Florentine biscuit (or simply a Florentine) is a delicious pastry made with nuts and fruit that is popular in Italy.

Florentines are made of nuts (usually hazelnuts and almonds) and candied cherries, which are blended with sugar and melted together with butter and honey before being baked in an oven until they are golden. When they are baked, they are frequently coated with chocolate on the bottom, which is typically decorated by scoring a wave design with the tines of a fork. Other varieties of candied fruit are also used in this recipe. They are often made without the use of wheat or eggs.

Remove from oven and wrap securely in clingfilm and tin foil (to avoid freezer burn) before storing in freezer for up to three months.

 

Florentine cookies appear to have originated in France, but were given the name “florentine” in honour of Catherine de’Medici, the Florentine queen of France who reigned from the mid-17th century until her death in the early 18th century. In French gastronomy, however, foods made with spinach are referred to as Florentine dishes, which may explain the name of the pizza.
